Each meal is balanced and full of healthy fats, protein, and complex carbs that take longer to digest. They’re all gluten-free, dairy-free, and there are plenty of vegan and egg-free options as well! Some can be prepped in advance and others are meant for that leisurely morning where you just want to hang in your jams and sip on some good coffee.

No matter how your morning usually goes, I hope you enjoy them as much as I do!

Which is why this super hearty gluten-free crispbread from Trader Joe’s is the perfect alternative! It’s full of nuts, seeds, healthy fats and fiber, which are essential for blood sugar balance. Top it off with a smear of freshly mashed avocado and add some “Everything but the Bagel” seasoning, microgreens or even some homemade bacon bits. I’m telling you, this is the perfect breakfast or snack when you’ve got a big day and you need to stay focused and full.

Kite Hill Yogurt Blueberry Parfait

If you’re one of my dairy-free Biscuits (heyyy!), then you know how hard it was to transition from traditional Greek yogurt to the dairy-free stuff. However Kite Hill has come to the rescue with tons of Almond Milk yogurt alternatives, including a new “Greek yogurt” option! I personally love the plain, because it’s super low in sugar and then add frozen blueberries or raspberries and some combination of hemp hearts, pumpkin seeds, cacao nibs, slivered almonds, or sliced pecans. And if I’m needing a little extra sweetness, I’ll add a drizzle of local honey, to help out my seasonal allergies too.

To make these, crack a dozen eggs in a mixing bowl and include the yolks as you’ll want to keep the fat in them. Then added fresh spinach, sauteed mushrooms (you’ll want to pre-cook them a bit), dairy-free cheese, pre-cooked chicken sausage or bacon and some salt and pepper! They cook super quickly and honestly, you don’t even need a muffin wrap with them either. They’re perfect for meal prep too and just microwave them for about a minute and you’re good to go!

My favorite thing about the Simple Mills brand is that their ingredients are truly simple! I like to doctor these up by adding a sliced ripe banana and 1/2 cup of chopped walnuts. When eating these for breakfast, consider spreading a little pure peanut or almond butter on the top so you help slow down a blood sugar spike. Because although these do have simple ingredients, there is still coconut sugar added, so you can do yourself a favor by adding some extra fat with the nut butter! These are super filling and satisfying too and I’ll bet your whole household will love them!

If you’re vegan or one of my egg-free Biscuits, then you probably already know how delicious a tofu scramble can be! Tofu is so versatile, as it absorbs any flavor you add to it. Start by sauteing any veggies and protein that you want to include, then squeeze the water out of your tofu block with your hand (no need for paper towels) and crumble it into your pan when everything is about 2/3 finished. Then top with avocado, sriracha, kraut, hemp hearts, and anything else that brings you joy!

Note: I always choose an extra-firm organic tofu block from the store as it feels the most like “eggs,” versus the softer silken variety.

Most of us have heard this so many times, but I’m here to tell you, a banana is ridiculously low on the totem pole when it comes to things that are detrimental to your health. However I will say that if you do want to eat bananas, I’d highly recommend you pair them with a nut butter, in order to keep your blood sugar from spiking. Bananas do have lots of sugar, but they’re also full of nutrients and fiber too!
